DEBBIE'S CHEESE ENCHILADAS (1 dozen) 

Ingredients

1 doz. tortillas

1/2 lb. grated longhorn cheese (medium)

1/2 lb. jack cheese, grated (medium)

1 medium onion, chopped

1/2 cup oil

2 tablespoons flour

2 small cans tomato sauce

salt, pepper, chili powder to taste

 

Method

Fry onion in oil until clear.  Add flour, then tomato sauce plus two cans of water (make a gravy).  Add salt, pepper and chili powder.

Warm tortillas, dip into sauce, fill with cheese, and roll.  Place all 12 in casserole and top with remaining sauce and cheese.

Bake 15 minutes in 350º oven.
